Avocados-we use these in so many dishes and they are in season right now!
Most avocados are hard when you purchase them, let them sit a few days on your counter to ripen up. Never refrigerate a hard avocado but always refrigerate a ripe one (they can then last up to a week).
To pit an avocado, cut it lengthwise until you reach the pit and the gently twist the two halves apart. Take your sharp knife and hit the pit with it and the knife will stick, gently pull up and pit will follow. Now you can scoop out the soft flesh and enjoy!
